Carbon dioxide is introduced into the vessels, pushing the air and oxygen out and gradually creating an almost fully anaerobic environment. As the process continues, the carbon dioxide naturally produced during fermentation helps maintain these conditions.\u003c\/p\u003e\n\n\u003cp\u003eWithout oxygen, a series of enzymatic reactions begins inside the cherries, while fermentation also continues around the fruit. These transformations play an important role in shaping the final profile, intensifying the coffee’s fruit character, sweetness and juicy texture.\u003c\/p\u003e\n\n\u003cp\u003e\u003c\/p\u003e\n\n\u003cp\u003eOnce fermentation is complete, the cherries are removed from the tanks and dried whole according to the natural process. The result is an expressive coffee with notes of sour cherries, redcurrant and bergamot, balanced by dark chocolate.
