This medium, rich in esters and fruity compounds, is then reintroduced into the fermentation process for another 36 hours, binding those tropical notes directly to the coffee beans.\n\nA final thermal shock wash locks in the flavor compounds and stabilizes the sensory profile, followed by slow drying in a dehumidifier to preserve delicate sweetness and prevent over-oxidation.\n\nThe result is a vibrant and polished cup, where lychee, white peach, and apple intertwine with a gentle floral brightness.
