Through this processing method, the team aims to highlight Geisha’s delicate and floral profile, combining it with the expressive sweetness and juicy character of peach.\n\nThe coffee is sourced from several small producers in the La Plata region of Huila, whose farms are located between 1,600 and 1,900 metres above sea level and average approximately three hectares in size.\n\nThe first stage of processing takes place directly at the farms, where the cherries undergo a 12-hour aerobic fermentation. The coffee is then depulped, and the wet parchment is transported to the Los Patios processing station. Here, the Los Patios research and development team adds a peach concentrate and its proprietary Los Patios solution. The coffee remains in this stage for two days, allowing the aromatic compounds available in the mixture to be transferred to and absorbed by the beans. The process is designed to complement the variety’s identity without overwhelming its natural elegance.\n\nFollowing co-fermentation, the coffee is dried for 12 to 16 days. Throughout this period, the beans are carefully monitored and regularly turned to ensure a slow and even drying process.\n\nThe result is an expressive yet refined Geisha, in which the sweet aromas of peach intertwine with the variety’s distinctive floral complexity.
