This ongoing collaboration allows us to access thoughtfully designed lots that are both expressive and consistent, as well as carefully controlled experiments where process precision matters just as much as sensory impact.\u003c\/p\u003e\n\n\u003cp\u003e\u003c\/p\u003e\n\n\u003cp\u003eTHE PROCESS: The Caturra cherries were harvested at over 20° Brix, then carefully sorted and cleaned before entering a multi-stage fermentation process. After an initial phase of carbonic maceration, the extracted mossto was inoculated with selected yeasts and co-fermented with banana under tightly controlled conditions of time, temperature, and pH. The coffee was then processed as honey and slowly dried in a greenhouse environment to preserve sweetness, structure, and aromatic clarity.\u003c\/p\u003e\n\n\u003cp\u003e\u003c\/p\u003e\n\n\u003cp\u003eThe cup is rich and indulgent, featuring ripe banana, burnt sugar cream, and subtle rum notes.
