Elias and Shady have become widely known in the specialty coffee world for their experimental projects and what could easily be described as hyper-processing - carefully controlled fermentations and processing techniques used to create highly intense, sweet and instantly recognizable flavour profiles.\n\n\u003cbr\u003e\n\nOur direct relationship with Elias and Shady started in 2022 and has since developed into a very close partnership. We have already visited them three times at El Vergel, giving us the opportunity to follow their work firsthand and see how their processing experiments continue to evolve from season to season.\n\n\u003cbr\u003e\n\nVanilla Heaven is built around Castillo, Caturra and Colombia varieties grown at approximately 1,500 metres above sea level. The coffee undergoes a honey process combined with a vanilla co-fermentation, enhancing its sweetness and creamy character while still keeping the structure of the coffee itself.\n\n\u003cbr\u003e\n\nThe result is an intensely sweet and almost decadent cup, driven by vanilla and coconut and rounded out by milk chocolate and nougat.
