Positioned above 2,100 metres and surrounded by fertile, nutrient-rich soils, the station benefits from excellent conditions for cultivating dense and aromatic coffee cherries.\u003c\/p\u003e\n\n\u003cp\u003eMore than 670 smallholder farmers from the surrounding communities contribute to this lot. On their small plots, they cultivate local Heirloom varieties that have adapted over generations to the region’s particular climate and landscape. Coffee is commonly grown alongside other crops, supporting both agricultural diversity and the livelihoods of farming families throughout the year.\u003c\/p\u003e\n\n\u003cp\u003eOnce delivered to the Chelbesa station, the cherries are sorted and floated to remove underripe or lower-density fruit. The coffee is then depulped, before undergoing a controlled fermentation of approximately two to three days to remove the remaining mucilage. The parchment is thoroughly washed, soaked for around 12 hours and slowly dried on raised African beds for 7–10 days. Throughout this stage, it is regularly turned and carefully sorted to promote even drying and consistent quality.\u003c\/p\u003e\n\n\u003cp\u003eChelbesa is part of the SNAP Specialty Coffee network, an Ethiopian company established in Addis Ababa in 2008. Through its washing stations, SNAP supports thousands of farmers with training, planting materials and resources designed to improve coffee cultivation and processing.
