"When we visited Roy in March this year, we were captivated by the passion with which he cultivates and processes his coffee. We were received with great warmth by him and his wife, Dariela, who also owns land and cultivates specialty coffee, the two together having approximately 1.7 hectares for cultivation. In the cup, Honduras Roy offers a chocolatey profile enhanced by blueberry and peach notes. More about Roy and Dariela Together, the two have a very young daughter named Aylin, whom we also had the pleasure of meeting when visiting Roy. ""We love her more than anything in this world. At the moment she is too young to realize what is happening on the farm, but sometimes we imagine what it would be like when we get old and can no longer work the same way, maybe Aylin will carry on the story and continue the work at the farm"" - a few words from to Dariela about their little girl, Aylin. ""But there is still time. At the moment we are young and lively and we still have a lot to do, we want to expand our land when we have the opportunity and offer you guys coffee lots of even higher quality"". More about the farm Together, Roy and Dariela own 1.7 hectares of land, located at altitudes between 1200 and 1250 m. Dariela's farm is called El Mandarino, and Roy's is Guayabina. The two cultivate three varietals: Pacas, Obata and Parainema. The shade is provided to the coffee trees by the forest pines, which are almost everywhere on and around the land owned by them. Mango trees and banana trees also provide shade for coffee trees (and, of course, also provide fruits for consumption). Besides these, a range of local trees, such as guamo or liquidambar, also produce shade on the farm. The batches of coffee produced by Roy and Dariela are certified FTO - meaning both Fair Trade and Organic. Their land is Rain Forest Alliance certified. More about the processing The ""natural"" process required little machinery, but more manual labor for Roy and his wife. The method consists of drying the whole coffee cherries, without first pulping them. The best ripe cherries are picked and placed on African drying beds (third picture from the farm), where they must be turned and raked as often as possible for uniform drying. The process generally lasts around 20-24 days, but it is best not to rush the drying. Rushing the drying can lead to various problems for either the producer or even the roaster if the coffee ultimately goes towards Europe, for instance. We were delighted to see the care with which Roy processes the coffee cherries and the joy it brings him. "
