Israel Degfa was our first partner in Ethiopia, and our collaboration began in 2019. Over the years, we have had the opportunity to work with several of his coffees, as well as to visit him and gain a deeper understanding of the projects he has built around the coffee-growing communities of Guji.
Ana Sora holds a particularly important place in this relationship. Located in Guji, Oromia, the farm reaches elevations of approximately 2,350 metres, where cooler temperatures and slower cherry development contribute to the elegant and complex profiles associated with this part of Ethiopia.
The Ana Sora project began in a relatively isolated area where coffee cultivation was still quite new. Today, the farm covers approximately 250 hectares, around 150 of which are planted with coffee. In its early years, production focused mainly on natural coffees, while cherries intended for washed lots had to be transported to the Adola washing station.
A major step came in 2018, when Ana Sora's own washing station was completed. Using water from the nearby Turo River, the new facility made it possible to process washed coffees directly at origin, giving the team greater control over quality throughout the process.
Around 1,000 smallholder farmers also work in the surrounding area, most of them cultivating plots of approximately two to three hectares. They deliver their cherries either directly to Ana Sora or through local collection centres. Coffee grows here on rich red-clay soils in a semi-forest environment, surrounded by native shade trees. Israel also supports local producers through training, access to plant material and financial incentives for careful cherry selection.
For this lot, local Ethiopian Heirloom varieties undergo a washed process with controlled fermentation, designed to preserve clarity and highlight the delicate character of the coffee. The result is a bright and expressive cup with notes of bergamot, chamomile and orange blossom, followed by a soft caramel-like sweetness.

We process orders within 2–4 business days, depending on workload. On the first business day after the weekend, we process all orders received on holidays. Delivery in Romania is then made in approximately 24–48 hours, depending on the courier and location.
Our coffee comes from sustainable farms, carefully selected from various producing regions. We visit at least two different origins each year, where we get to know the farmers personally and see first-hand the processing methods. This way, we ensure that each batch meets our quality and traceability standards.
For hygiene and food safety reasons, we cannot accept returns for coffee packages.
Specialty coffee is a natural product. The flavor may vary slightly depending on the harvest, growing conditions, and roast profile chosen for that batch, but we promise to always maintain our standards of quality and freshness.
