Brazil Lemon Tart Guariroba is a Topazio lot from Fazenda Guariroba, one of Brazil’s most recognized specialty coffee estates.
Guariroba is widely known for pushing Brazil beyond the classic profile, using distinctive processing choices to build cups that feel more expressive and “funky-leaning”, while staying clean and structured.
Their reputation is backed by results: in 2016, Fazenda Guariroba won Cup of Excellence Brazil (Naturals) with an outstanding 90.5 score — a landmark achievement that cemented the farm’s international status.
The process: cherries are harvested only once they reach over 24° Brix, then undergo hydraulic selection before entering a closed bioreactor for 48 hours. After this first stage, the cherries are pulped, and a second fermentation lasts 72 hours, using a solution containing microorganisms carried over from the first fermentation. Drying follows on African beds for 30–40 days, helping lock in sweetness, clarity, and a long finish.
In the cup, this lot is bright, aromatic, and dessert-driven: lemon tart zing, honey sweetness, chamomile florals, and brown sugar depth. A modern Brazil that feels refreshing and playful — yet unique and polished.
