Coco Riviera is the creation of Jefferson Adrian Motta, the producer behind Motta Farm, a 4.6-hectare farm located at 1,700 metres above sea level in Acevedo, Huila. Working with the Ombligón varietal, Jefferson aims to create coffees that are intense and immediately recognisable, while still maintaining clarity and structure. For this lot, he developed a coconut co-fermentation process designed to amplify the coffee’s natural sweetness and complement the character of the varietal.
The process begins with the selective hand-harvesting of cherries at their optimal level of ripeness. The fruit is then sorted through flotation to remove low-density cherries, before the selected lot undergoes a controlled oxidation stage that prepares it for fermentation.
Jefferson then introduces selected yeasts and coconut must to guide the fermentation and contribute to the development of the aromatic profile. The co-fermentation lasts for more than 70 hours and is divided into two carefully monitored stages. The second fermentation is activated through a controlled thermal shock, used to intensify aromatic expression while preserving clarity in the cup.
After fermentation, the coffee is processed as a yellow honey, with part of the mucilage retained on the beans, before undergoing a slow drying stage. Throughout the entire process, Jefferson measures and controls each variable, focusing not only on aromatic intensity, but also on consistency and the ability to reproduce the same profile from one harvest to the next.
The result is a creamy and expressive coffee, with clear notes of coconut, pineapple, white rum and vanilla. The coconut is well integrated into the profile without completely overpowering the character of the coffee, while the honey process supports its sweetness and smooth, velvety texture.
We named it Coco Riviera after the combination of its tropical flavour profile and the elegant, relaxed feeling it conveys. Brewed as filter, it is aromatic, sweet and layered, while as espresso it becomes denser, creamier and more intense.

We process orders within 2–4 business days, depending on workload. On the first business day after the weekend, we process all orders received on holidays. Delivery in Romania is then made in approximately 24–48 hours, depending on the courier and location.
Our coffee comes from sustainable farms, carefully selected from various producing regions. We visit at least two different origins each year, where we get to know the farmers personally and see first-hand the processing methods. This way, we ensure that each batch meets our quality and traceability standards.
For hygiene and food safety reasons, we cannot accept returns for coffee packages.
Specialty coffee is a natural product. The flavor may vary slightly depending on the harvest, growing conditions, and roast profile chosen for that batch, but we promise to always maintain our standards of quality and freshness.
