The Los Patios project elevates the already delicate Geisha variety to a new level of refinement. After a short in-fruit fermentation, the cherries are co-fermented for two days with natural peach concentrate, then slowly dried under the gentle rays of the sun over the course of up to 16 days. The result is a coffee with a distinct floral elegance, where the noble and complex character of the Geisha varietal blends harmoniously with the fruity potential of this carefully executed co-fermentation.
