The good partnership with Elias and Shady Bayter brings us close to many special lots from the Tolima region, and this time they propose this special processing. The coffee cherries are kept for 52 hours in pressurized containers with CO2. The change in atmospheric pressure makes the cherries become soft and gives them a special fermentation. The cup profile is, unsurprisingly, a bold, yet soft, one, with a lively acidity, characteristic of the processing and a pleasant fruity sweetness.
