Israel Degfa is our first partner from Ethiopia, with whom we began collaborating in 2019. A year later, we visited him "at the source," and upon seeing the dedication and meticulousness with which he processes his batches, we knew we would have a long-term partnership. The batch presented today is a classic, emblematic of the aromatic profile offered by the Guji region of Ethiopia, and also a perfect example of natural processing, offering tasting notes of blueberries, chocolate, and a persistent, sweet aftertaste.
